Why Can Honey Be Stored for a Long Time?

Honey can be stored for a long time without spoiling because of its low moisture content, high acidity and the hydrogen peroxide it contains. These properties prevent bacteria and microorganisms from multiplying.

Honey contains only around 17–18% water. Its low moisture level removes the humid environment that microbes and bacteria need to survive. When bees collect nectar, they add their own enzymes. These enzymes produce hydrogen peroxide in honey, which kills microorganisms.
